For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil (for brushing)

- 1 teaspoon black pepper
For the Lemon Butter Sauce:
- 4 tablespoons unsalted butter (cold, sliced)
- 3 cloves garlic, minced
- 1 small yellow onion, finely minced
- ½ cup dry white wine (or chicken broth)
- 2 tablespoons fresh lemon juice
- ¼ cup heavy cream (optional for extra richness)
For the Toppings:
- 4 ounces goat cheese (Caprino or other varieties)
- ¼ cup sun-dried tomatoes, chopped
- 2 tablespoons fresh basil, chopped or cut in ribbons
Instructions
- Marinate the Chicken
- Brush chicken breasts with olive oil and season both sides with salt and pepper. Let them marinate for 15–30 minutes.
- Grill the Chicken
- Preheat a grill or grill pan over medium heat. Grill chicken for 6–8 minutes per side or until the internal temperature reaches 165°F.
- Prepare the Lemon Butter Sauce
- In a saucepan, melt 1 tablespoon of butter. Sauté garlic and onion until soft.
- Pour in white wine and lemon juice, simmer until reduced by half.
- Reduce heat and slowly whisk in the remaining cold butter slices until smooth.
- Stir in heavy cream (if using), sun-dried tomatoes, salt, and pepper.
- Assemble the Dish
