Description

This Gooey Coconut Cake is soft, buttery, and packed with coconut flavor. A rich yellow cake base is topped with a creamy coconut mixture, creating a perfectly gooey texture. This easy, no-fail recipe is perfect for parties, holidays, or whenever you crave a tropical treat!

Ingredients

Scale

For the Cake Base:

  • 1 box yellow cake mix (15.25 oz)
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup chopped pecans (optional)

For the Gooey Coconut Topping:

  • 1 (8 oz) package of cream cheese, softened
  • 2 large eggs
  • 1/2 cup coconut cream
  • 4 cups powdered sugar
  • 1 1/2 cups sweetened shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the cake base: In a large bowl, mix the yellow cake mix, melted butter, and egg until well combined. If using chopped pecans, stir in them. Spread the mixture evenly into the prepared baking dish.
  3. To make the gooey coconut topping, beat the cream cheese in another bowl until smooth. Add eggs one at a time, then mix coconut cream and powdered sugar. Stir in shredded coconut.
  4. Assemble the cake: Pour the coconut mixture over the cake base evenly.
  5. Bake for 45-50 minutes or until the edges are golden and the center is slightly soft.
  6. Cool completely before slicing. The cake will firm up as it cools.
  7. Serve and enjoy! Garnish with extra shredded coconut or whipped cream if desired.
