Ingredients

  • 1 lb lean ground beef (85% lean)
  • 4 medium Russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 2 cups whole milk
  • 2 cups Velveeta cheese, cubed (or shredded cheddar cheese)
  • ½ lb spicy sausage, cooked and sliced

Instructions

Prepare Ingredients

  • Peel and dice the potatoes, chop the onion and carrots, and mince the garlic. Cook the spicy sausage and slice it into bite-sized pieces.

Cook the Ground Beef

  • In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease and set the beef aside.

Sauté the Vegetables

  • In the same pot, sauté the onion, carrots, and garlic until tender and aromatic (about 5 minutes).

Simmer the Soup

  • Add the diced potatoes, cooked ground beef, and chicken broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cook for 20–25 minutes, stirring occasionally, until the potatoes are tender.

Create the Creamy Base

  • Lower the heat and stir in the milk and Velveeta cheese. Continue stirring until the cheese is fully melted and the soup is smooth and creamy.

Add Sausage and Seasonings

  • Stir in the cooked sausage, salt, pepper, and dried basil. Adjust the seasoning to taste.

Serve and Garnish

 

  • Ladle the soup into bowls and garnish with shredded cheese, fresh parsley, or green onions. Serve with crusty bread for dipping.
