Ingredients
- 1 lb lean ground beef (85% lean)
- 4 medium Russet potatoes, peeled and diced
- 4 cups chicken broth
- 1 medium yellow onion, finely chopped
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 2 cups whole milk
- 2 cups Velveeta cheese, cubed (or shredded cheddar cheese)
- ½ lb spicy sausage, cooked and sliced
Instructions
Prepare Ingredients
Peel and dice the potatoes, chop the onion and carrots, and mince the garlic. Cook the spicy sausage and slice it into bite-sized pieces.
Cook the Ground Beef
In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease and set the beef aside.
Sauté the Vegetables
In the same pot, sauté the onion, carrots, and garlic until tender and aromatic (about 5 minutes).
Simmer the Soup
