These Peanut Butter Brownie Bars are a rich and indulgent twist on classic brownies. Featuring a fudgy chocolate base with a creamy peanut butter layer, they are the perfect combination of sweet and salty. A must-try dessert for any chocolate and peanut butter lover!

Ingredients

Scale

For the Brownie Batter:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup Dutch-process cocoa powder (or unsweetened cocoa)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

For the Peanut Butter Filling:

  • 3/4 cup creamy peanut butter (processed, like Jif or Skippy)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Peanut Butter Filling:
    • In a bowl, mix peanut butter, powdered sugar, and vanilla until smooth.
    • Spread the mixture on a parchment-lined plate and freeze for at least 20 minutes.
  2. Make the Brownie Batter:
    • In a saucepan, melt butter over low heat. Remove from heat and whisk in cocoa powder and sugars.
    • Add eggs one at a time, whisking well after each addition. Stir in vanilla.
    • Fold in flour, salt, and baking powder until combined. Do not overmix.
  3. Assemble the Brownies:
    • Preheat oven to 325°F (163°C) and grease a 9×13-inch metal pan.
    • Pour half the brownie batter into the prepared pan.
    • Add the frozen peanut butter layer.
    • Pour the remaining brownie batter on top.
    • Use a toothpick or knife to create swirls.
  4. Bake:
    • Bake for 30-35 minutes, checking at the 30-minute mark.
    • A toothpick inserted 2 inches from the edge should come out with a few moist crumbs.
    • Let cool completely before slicing.

Notes

  • For ultra-fudgy brownies, slightly underbake them and allow them to cool completely.
  • Use a metal pan for even baking; if using glass, reduce oven temperature to 315°F (157°C).
  • Store at room temperature for up to 4 days or freeze for up to 3 months.
