- 4 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
For the Peanut Butter Filling:
- 3/4 cup creamy peanut butter (processed, like Jif or Skippy)
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Peanut Butter Filling:
- In a bowl, mix peanut butter, powdered sugar, and vanilla until smooth.
- Spread the mixture on a parchment-lined plate and freeze for at least 20 minutes.
- Make the Brownie Batter:
- In a saucepan, melt butter over low heat. Remove from heat and whisk in cocoa powder and sugars.
- Add eggs one at a time, whisking well after each addition. Stir in vanilla.
- Fold in flour, salt, and baking powder until combined. Do not overmix.
- Assemble the Brownies:
- Preheat oven to 325°F (163°C) and grease a 9×13-inch metal pan.
- Pour half the brownie batter into the prepared pan.
- Add the frozen peanut butter layer.
- Pour the remaining brownie batter on top.
- Use a toothpick or knife to create swirls.
- Bake:
- Bake for 30-35 minutes, checking at the 30-minute mark.
- A toothpick inserted 2 inches from the edge should come out with a few moist crumbs.
- Let cool completely before slicing.
Notes
- For ultra-fudgy brownies, slightly underbake them and allow them to cool completely.
- Use a metal pan for even baking; if using glass, reduce oven temperature to 315°F (157°C).
- Store at room temperature for up to 4 days or freeze for up to 3 months.
