Ingredients

Scale

Soup Base:

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes with green chilies
  • 4 cups chicken or vegetable broth
  • 1 packet taco seasoning

Optional Garnishes:

  • 1 bag Fritos chips
  • Shredded cheddar or Monterey Jack cheese
  • Sour cream or plain Greek yogurt
  • Fresh cilantro, chopped
  • Lime wedges
  • Diced avocado

Instructions

  • Heat a large pot over medium heat and brown the ground beef, breaking it into crumbles. Drain any excess fat.
  • Add the diced onion and garlic, cooking until fragrant and soft (about 3 minutes).
  • Stir in the taco seasoning until the beef is well coated.
  • Add the black beans, pinto beans, corn, and diced tomatoes. Mix well.
  • Pour in the chicken or vegetable broth and bring the soup to a gentle simmer.
  • Reduce the heat to low and let it simmer for 20–25 minutes, stirring occasionally.
  • Serve hot, topped with Fritos, shredded cheese, sour cream, cilantro, and a squeeze of lime.

Notes

  • Substitute beef with ground turkey, chicken, or plant-based crumbles for dietary preferences.
  • For a thicker soup, blend a portion of the beans or add a cornstarch slurry.
  • Freeze leftovers in airtight containers for up to 3 months.
